  • Vegan enchiladas! 😍 Using one of my new favourite meat-alternatives from @nakedgloryuk . Full of flavour, filling and delicious. They also have sausages and quarter pounders, which I cant wait to try next. Has anyone else tried their range?⁣ ⁣
Cooking time: 30 minutes. Serves 3⁣
⁣
1. Slice up half a yellow pepper and half a red pepper.⁣
2. Warm the oil in a large frying pan over a medium heat.⁣
3. Add the @nakedgloryuk mince.⁣
4. Fry the mince until cooked through, stirring occasionally.⁣
5. Add 1tsp of paprika, 1 tsp of garlic, 1 tsp of chilli and a pinch of salt. Stir through.⁣
6. Add the strips of pepper.⁣
7. Fry for a minute then add 200ml of water⁣
8. Bring up to a simmer and cook for around 5 minutes until the liquid has reduced.⁣
9. Heat the tortillas for 45 seconds.⁣
10. Fill each with the meaty mix, rolling them up and placing edge side down, side by side in a roasting dish.⁣
11. Pour the salsa over the enchiladas.⁣
12. Sprinkle the grated cheese on top.⁣
13. Bake at 180C for 20 minutes.⁣
⁣
Slice in half and serve! AD⁣ ⁣

As you may of noticed I have let my colour grow out and decided to look after my hair a lot more. At home I use @bondiboost Shampoo and Conditioner which I have found works best on my hair. And of course it’s cruelty free and vegan 🌱 I’ll be packing these to take with me to Bali to keep my hair hydrated and healthy whilst in the sun and water! 🌞

Tonight’s Veganuary recipe is a Tofu Katsu curry 🥘 Healthier than Wagamamas and cheaper to make at home too! ⁣

Recipe: Serves 2⁣
Cooking time: 30 minutes ⁣
⁣
1. Preheat the oven to 180. ⁣
2. Pour 80g of cornflakes into a tea towel and crush them with a rolling pin until fine. Transfer onto a plate. ⁣
3. On another small plate combine 35g of plain flour with a few pinches of salt and pepper. On another plate pour 60ml of plant based milk. 🍼⁣
4. Drain the tofu and press to remove any moisture. Then slice into thick slices. Then coat with the flour mixture, then the milk and finally cover in the crushed cornflakes.⁣
5. Heat a little oil in the frying pan and fry the tofu slices for 2-3 mins until crispy. Then transfer the tofu slices to a baking try and bake in the oven for 15 minutes. 👩🏼‍🍳⁣
6. Meanwhile chop 2 medium carrots and half an onion and fry both for around 7 minutes. 🥕⁣
7. Peel and dice two garlic cloves and add to the frying pan for 2 minutes.⁣
8. Add half a tbsp of curry powder, half a tsp of cumin and 1 tbsp of plain flour to the pan and fry for one minute, stirring frequently. ⁣
9. Pour 300ml of vegetable stock into the frying pan and bring to boil. Then let simmer for 15 minutes until the carrots are soft.⁣
10. Cook one packet of rice. (I always use brown). ⁣
11. Stir in 2 tbsp of coconut cream into the sauce and season with salt and pepper. Then blend the sauce until smooth. 🥥⁣
12. To serve add a portion of rice into the bowls, along with a handful of mixed salad. Then pour in half of the sauce into each bowl and top with a few slices of tofu. ⁣
13. To finish add one sliced spring onion over the top and serve! 🌱⁣

  • Monday Recipe! This is from @bosh.tv and one of my favourites 😍 I think it would be a perfect dish to serve for a Sunday brunch with friends, you honestly wouldn't be able to tell if it was vegan or not. 🍓

Serves: 4

Recipe:

1. Pre heat the oven to 180C. Put a heatproof bowl on top of a saucepan to melt 75g of chocolate. Once the chocolate has melted add 2 tbsp of icing sugar and mix in completely.

2. Lay 1 sheet of puff pastry onto a linked baking sheet (I used Jus-Rol, don't forget to put it in the fridge beforehand like I did 🙄) pour the melted chocolate onto the centre of the pastry, spreading it out and leaving a 2cm gap around the edges. Then lay the second sheet of pastry on top and press the two sheets together all the way around the edges.

3. Make three evenly spaced cuts into the long edges of the pastry. Then place one square of chocolate in the middle of each flap of pastry. Roll the flaps over the chocolate chunks and press to seal.

4. Brush over the top with plant based milk and bake in the oven for thirty minutes, until the pastry is golden and crispy.

5. Take out of the oven and drizzle melted chocolate over the top, add some fresh berries and dust with icing sugar and serve! ♥️🌱
