  • As promised here is the recipe for the chickpea, spinach and tomato curry! Very easy to make and so good. 😍⁣⁣
⁣
1️⃣ Chop half a red onion, 1 garlic clove, 3 tomatoes and grate 1cm of ginger. Then blend all together to form a purée.⁣⁣
⁣⁣
2️⃣ Heat oil in a large pan and add 1tsp of cumin, 1tsp of turmeric, and a pinch of chilli flakes. 🌶⁣⁣
⁣⁣
3️⃣ Then add the purée to the pan and 1 tsp of nutritional yeast and stir.⁣⁣
⁣⁣
4️⃣ Next add 2tbsp of lentils and 3tbsp of coconut cream and continue to stir.⁣⁣
⁣⁣
5️⃣ Once the lentils are tender add 1 head of broccoli and continue to cook. 🥦⁣⁣
⁣⁣
6️⃣ Then stir in half a can of chickpeas drained and a big handful of spinach.⁣⁣
⁣⁣
7️⃣ Continue to cook until the spinach has wilted then squeeze half a lemon over and add 1tbsp of chopped cashews to the mixture.⁣⁣

8️⃣ Serve with rice or quinoa, I used quinoa this time. Enjoy! Please tag me if you recreate ☺️⁣⁣

  • CHOCOLATE CHIP COOKIES 🍪👩🏼‍🍳⁣

Ingredients: ⁣
64G of melted coconut oil⁣
34ML of coconut milk⁣
2 tsp of vanilla extract⁣
284G of plain flour ⁣
Half a smashed banana 🍌⁣
170G of brown sugar⁣
1 tsp of baking soda⁣
1/2 tsp of salt⁣
250G of vegan chocolate chips ⁣

Method:⁣
1️⃣ Pre heat the oven to 180 degrees Celsius ⁣
2️⃣ Mix the wet ingredients together (coconut oil, coconut milk, vanilla extract and banana).⁣
3️⃣ In a separate bowl mix together the dry ingredients (sugar, salt, baking soda and flour).⁣
4️⃣ Then combine the wet and dry ingredients together in one bowl and blend until it becomes a dough like consistency.⁣
5️⃣ Fold in the chocolate chips 🍫⁣
6️⃣ Place a golf ball size amount of the dough onto a lined baking tray leaving space in between each one.⁣
7️⃣ Bake in the oven for 10-12 mins.⁣
8️⃣ Take out of the oven and leave to cool for a couple of minutes before enjoying. I had mine with a glass of almond milk and it was delish 🍼😍⁣

All you need is a workout matt, a few bits of home equipment (I used coffee jars as I have no weights) and some good music!⁣

Crazy that before isolation I would never stay to stretch after a class, was always in a rush to get somewhere! Was anyone else the same?? It’s actually been nice to take the time to stretch and I encourage you to try do a little bit of exercise every day if you can as I think it’s honestly the only thing right now that’s giving me energy and makes me feel sane! I’ve been loving @paolasbodybarre virtual classes and @stef_fit live workouts💞⁣

Coconut and banana pancakes 🥞⁣
⁣
Recipe: Mix together 150G of plain, 2 tsp of baking powder, 2 tbsp of sugar, and a pinch of salt.⁣

Pour a can of coconut milk into a bowl and whisk. Then slowly add 300ml of it to the mixture to make a smooth batter.⁣
⁣
Heat a little oil in a frying pan and use 2tbsp of batter to make each pancake. Put a couple slices of banana into each pancake and flip when they start to become crispy.⁣
⁣
Serve with strawberries and maple syrup 🤤🍓
